Since the kitchen was always the domain of the servants, I suspect the large work area off the main kitchen served as their lounge/dining room, and the mezzanine kitchen was used to keep warm the food prior to serving, obviating the need for a dumbwaiter (so what if they had to schlepp it a couple of floors?
